Yellow Lentil Soup


  • 1 onion
  • 2 cups yellow lentils
  • 2 tablespoons butter or olive oil
  • 1 liter of broth or water
  • 1 tsp salt
  • 1/2 cup flour
  • 1 teaspoon turmeric


  1. Cut the onion in half and chop it finely into half a moon.


  1. Heat the pan over a low heat and add 1 tablespoon of oil.
  2. Once the oil is browned, add the flour and roast for 1 minute.
  3. Add the lentils, broth and salt, respectively.
  4. Cook, stirring, for 30 minutes.
  5. In another saucepan, roast the flour together with 1 tablespoon of oil.
  6. Gently add this mixture to the soup and turn off the bottom of the stove when it boils.
  7. Add the turmeric.
  8. Smooth with the blender.
